Whatever you're over thinking, just STOP.
As much as I hesitate to reveal the fact that I occasionally listen to country music, the words of Sugarland say it best: life don't go quite like we planned it. We try so hard to understand it, but the irrefutable, totally beautiful fact is: it happens.
Just. Simplify.
Simplify your relationships, your stress, your food, your money. Easier said than done, but awesome that discovering a new simple recipe can bring everything into perspective for me.
Without further ado...
Balsamic Dijon Veggies
5 brussel sprouts
5-7 broccoli florets
1/2 red bell pepper
1/2 c. spaghetti squash, roasted
1/2 large sweet potato, roasted
2 c. kale
Whatever veggies you have on hand to fill a large frying pan!
2 tbsp. dijon mustard
5-6 tbsp. balsamic vinegar
2 tbsp. nutritional yeast
coconut oil spray
Directions: spray large frying pan with coconut oil spray and turn on medium heat. Add brussel sprouts and broccoli. Let sautée for 2 minutes. Add bell pepper and kale. Spray kale with additional coconut oil spray and COVER. Let cook for 2-3 minutes, or until kale begins to soften. Add sweet potato and spaghetti squash and let cook another 2 minutes. Add mustard, vinegar, and nutritional yeast. Stir and heat thoroughly. Serve on its own, over your favorite grain, or in a POWERBOWL!
I put mine over lentils and topped it with a 1/4 avocado. DELISH.
These are so delicious on their own. If you find that they are a little too dry, just add more balsamic to taste. Serious credit to the hubby for inspiring this recipe! This will be a serious staple in the next months.
