[Wanna-Be] Clover Food Truck Sammich & Healthy Bites Review

If you're from Boston, you should know the Clover Food Truck. Ok, granted it's mostly the hippies in Cambridge who rant and rave about this, but it makes its fair share of appearances around Park Street and BU. Sadly, the Clover website doesn't do a great job of explaining what they're all about, so I'm directing you to their Wikipedia page. Anyway, a while ago I ate there and had the most amazing seitan "BLT." I've been craving it ever since. Honestly, I wasn't really trying to recreate it here, but my hubby took one bite and said, "This is better than Clover!" Day made.

Seitan Sammich

8 oz. package seitan strips
1/3 c. vegan mayo
1-2 tbsp. dijon mustard
1-2 tbsp. spicy sauce (I used a spicy southwest miso sauce, but you could use sweet chili sauce, a smaller amount of hot sauce, etc.)
2 cups spring mix or romaine
4 slices tomato
2 slices vegan jack cheese (I used the Daiya block)
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 tsp. pasta sprinkle
4 slices whole wheat bread (or pita pockets)

Spray pan with cooking spray and turn onto medium heat. Add seitan and all dry spices. [I think this would be even better with freshly sautéed onion and garlic, but I was too lazy last night]. Sauté until seitain starts browning and REMOVE FROM HEAT. In a separate bowl, mix mayo, mustard, and spicy sauce.

Toast bread and then top with spring mix and tomato. Place cheese slice on and top with warm seitan. Drizzle sauce over the top and top with second bread slice. [You people know how to make a sammich, right?]


Makes 2 servings.

With 1.5 servings cheese on 2 slices Ezekiel bread
-510 calories
-36 grams protein

Kasey, blogger over at Powercakes, recently had a guest post from Lindsay Cotter, blogger over at Cotter Crunch. Lindsay has started her own business selling Healthy Bites. Check her out. Pretty cool stuff. Of course, I just had to order some. We tried the "Whey Good" (vegan version, of course) and the "Muddy Buddy Mocha." They were both phenomenal. They are the perfect little treat to hit that sweet tooth, but still offer good fuel...and PROTEIN!...for your body. 
As you can see, they're pretty small, but they are dense and satisfying! Each one takes at least 3 bites to
eat. But hey...I wouldn't turn down a bigger version!
These run about 50 calories each - what about a 100 calorie version?

In my opinion, they were a bit expensive, but I also opted to pay more for the vegan protein ones. The coconut was DELICIOUS. I only ordered 2 dozen and I'm going to be so sad when they're finally gone :/
