Oh yes. I found a new muffin recipe. Packed with plant power and whole foods, there is nothing left to be desired. Ok, I'll admit. It's a Happy Herbivore recipe, so this is really more of a review than a recipe share. I did alter a few things though. Check it out:
Apple Crisp Muffins
1 c. whole wheat flour
1 c. mixed grain oats (or rolled oats)
2 tsp. baking powder
1 tsp. baking soda
1/2 c. Sucanat
1/4 c. brown sugar
2 tsp. cinnamon
1/4 tsp. ground ginger
dash of nutmeg
1/4 tsp. salt
1 c. unsweetened applesauce
1 medium apple, diced
1/4 c. agave nectar
Preheat oven to 350 F. Spray muffin tin with coconut oil or cooking spray and set aside. In a large bowl, whisk flour, oats, baking soda, baking powder, salt and spices together until well combined. Add applesauce, sugars and maple, then stir until combined. Add apples, stirring until just combined. Spoon into muffin cups. Bake 18-25 minutes, or until a toothpick inserted in the center comes out clean.
Makes 12 muffins.

CAN SOMEONE PLEASE TELL ME WHY MUFFINS FROM THE STORE OFTEN HAVE OVER 300 CALORIES?!? Even many of the "healthier" ones at Trader Joes are pretty high. I can't figure it out. I didn't even reduce the sugar at all in this recipe, and the nutrition facts are still great. Next time I might try replacing half of the sugar with stevia. I also love that this recipe really does make 12 muffins - 12 real adult size muffins that overflow the tin. DELICIOUS.
