Black Rice Tempeh Wraps

Black rice? My only question is, why isn't this ALL THE RAGE?! It's delicious. It's thick, sticky, and super flavorful...rather nutty I think.

I've had wild rice before, and may also have had black rice mixed into a rice pilaf, but I had never tried it on its own until this past week. I picked up a bag at Whole Foods on Sunday and brought it home to cook a bunch of it up to use during the week. I made mine with a little extra water which made it just perfect :)

Awesome surprise: it turns purple when you cook it! Very chique.

Since I also found tempeh on sale at Whole Foods, I concocted these delicious wraps.

Black Rice Tempeh Wraps

1 8 oz. package tempeh (I used 5 grain organic tempeh)
5 tbsp. lime juice
5 tbsp. Bragg's liquid aminos
3 tbsp. peanut butter (or 5 tbsp. PB2)
1 tbsp. tahini (optional - you could also use miso or extra peanut butter)
2 tbsp. agave nectar
1/4 tsp. cayenne
2-3 tsp. minced garlic
1 c. cooked black rice
2 large leafy greens for wrapping (I used collard green leaves for extra sturdiness)
Unlimited veggies for topping! E.g. bell peppers, cucumbers, sprouts, tomatoes, etc.

Mix the lime juice, Bragg's, peanut butter, tahini, agave, cayenne, and garlic in a large bowl. Add the tempeh and let marinate for as long as you like (I left mine about an hour, but I think less would have been just fine). Meanwhile, cook black rice according to package instructions. When rice is done, fluff with a fork and spread across the greens. Top with marinated tempeh and any veggies you have on hand. Drizzle wraps with extra sauce, wrap, and enjoy!

Completely dependent on what kind of tempeh you use and what veggies you add!
Ours were around 350 calories with about 20 grams protein.




These were beyond messy, but so unbelievably delicious. There's nothing like a good powermeal.

And of course there were leftover collard green leaves and sauce, so the next day I filled one with sliced sweet potato, black beans, veggies, and leftover peanut sauce: AMAZING.


Just make sure you have a huge plate for all the dripping, or maybe just don and apron and get ready to get your hands dirty!
