PROGRESS

Today was my last session with my personal training (at least until the new year) and it was way more emotional than I thought it would be :/ I was unbelievably encouraged to have lost more weight this week, even though that's not my ultimate goal. I was even more encouraged to get to do my measurements and body fat percentage for the first time since I started weekly training the first week of September. My trainer is going to email me the exact stats we took, and I'd love to share with all of you, but here's what I remember:

  • Body fat percentage: 25% (Down from 28%. 25% is the lowest percentage on the "average" scale. Anything below 25% is considered "fitness" scale. Anything below 20% is "athlete" scale.)
  • I lost size all over my body, but the biggest jump was 10cm off of my waist! I can't remember the rest, but I'll get them soon. 
It was so motivating to see the progress, but there was no time for slacking off - we headed straight into killer circuits involving rows, box jumps, squat press, medicine ball slams, weighted rope throws, burpees, push press, and......then I blacked out. HA. Felt awesome.

I came home to try out my new Vitamix for the first time! Enjoy this little gem:

Yesterday was the day to get back my kitchen mojo. After weeks of stress and exams, I found time to cook again. I roasted squash, boiled up some quinoa, made a homemade powerbake dessert, and whipped together a soulfood dinner. 

For dinner it was Happy Herbivore's Tempeh Chili Mac. I won't share the exact recipe - check out her book!  It's basically a savory homemade chili sauce mixed with crushed tempeh, diced tomatoes, and thrown onto some noodles. I made it with brown rice pasta for the hubby, and I had mine over quinoa. Super filling!

Water, Bragg's, chili powder, garlic powder, oregano, nutritional yeast, cumin, ketchup,  mustard.

Dished up with some lovely roasted acorn squash! Topped with a few slices of Daiya pepperjack vegan cheese.
EAT A RAINBOW.

And yes, of course there was luscious homemade dessert...but I'll save that for tomorrow :)
