Powerbowl Prep + beTRUEtoYOU challenge

Today's post will be a bit random, but come on - I'm in the heat of law school finals here. Cut me some slack.

First off, I know some of you have been super inspired by the recipes and healthy eating tips I've been posting, but have trouble with the idea of food prep time. I know you've heard it all before - cook ahead, freeze things, it really doesn't take that long, yada yada yada. Two things: 1) If this is important to you, you're going to have to allot some time to it. You should budget your time just like anything else. Subtract all the necessities (work, etc.), see what you have left over, and divy it up. When you decide how much time you have for making healthy food, work with that time and do what you can. 2) Here is how I prep on the weekend for lunches for the entire week:

I roast a huge pan of vegetables. It takes about 10 minutes to cut them up, and they go in the oven for about 45 minutes while I keep studying. When they come out, I chop them up, throw them in a HUGE tupperware, and eat them all week in powerbowls and salads.


Throw in some lettuce, spring mix, or kale, top with roasted veggies and some canned beans, and drizzle with your favorite dressing. For an extra kick of protein on top of the veggies and beans, try adding nutritional yeast to your favorite dressing - awesome - or throw a big scoop of hummus on top.

Talk about a POWERKICK: 330 calories, 18 grams protein. 

Another bonus? These vegetables are cheap year round and last a long time in the fridge. Although a variety of fresh vegetables is so good for you, do what you can. Root vegetables are a great alternative.
