Kale Hemp Pesto
2 c. steamed kale
2 tsp. minced garlic
1/2 tsp. salt
1/2 tsp pepper
1/4 c. hemp seeds
1/4 c. nutritional yeast
2 mounded tbsp. tahini
2 tbsp. of fresh mixed herbs (I used sage, rosemary, and thyme)
2 tsp. basil or pasta sprinkle
First, place steamed kale in food processor with a drizzle of water. Chop for 5-10 seconds. Add in all other ingredients and process for 2 minutes or until creamy.
If you don't have one of these steamer inserts for a pot, GET ONE. The fastest and healthiest way to cook veggies. |

I used this phenomenal combo on top of my powerbowl for lunch. It was a game changer. This sauce is not exactly low calorie, but it's packed with complete proteins, fresh greens, and healthy fats. No shame there. Throw this on top of any veggie combo you like, and you'll have a fantastic meal.

Today is a running day for me (after lifting the past 2 days), so I'll be carb-ing up with a hearty salad for lunch. Lately this has been my obsession:
Raw kale, spring mix, sweet potato, black beans, grape tomatoes, bell pepper, alfalfa sprouts, and avocado. Topped with Trader Joes' Spicy Peanut Vinaigrette. |
I'm telling you - the weirdest food combos can turn out to be the most addictive flavors. I have a friend who calls these "garbage salads." Whatever you have in the fridge that falls into the category of fruit or veggie goes into the bowl, and vuala!
